1 ½ cups Rolled Oats
¾ cup unbleached white flour
¾ cup whole wheat flour
½ cup firmly packed brown sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons cinnamon
½ cup raisins
1 cup finely chopped, peeled, tart apple (such as granny smith)
1 egg, slightly beaten
½ honey
½ cup oil
1/3 cup milk
Preheat the over to 375 F. Combine dry ingredients. Stir in raisins and apples. Combine wet ingredients. Mix to form a smooth batter. Drop on an ungreased cookie sheet leaving 2 inches between cookies. Bake for 10-12 minutes.
Where this recipe came from….Simple enough the credit goes to a little promotional Recipe Collecting Club Great American Home Baking. How I came to have them was Colby doing deconstruction on an old house in the mountain Community of Summit, Utah (near Park City ) found the binder & brought it (with a whole lot of other strange treasures) home to me. I spend an hour combing through it laughing at the corny recipes but some of them grew on me so I kept one or two.
